Cormac Cronin of Bodega Restaurant, Waterford has opened a new Restaurant called Burzza. Located at 53 John Street, Waterford, beside its renowned sister restaurant Bodega, Burzza specialises in real Italian style wood-fired Pizzas and proper Hamburgers. Pizzas are a true slice of Italy. Dough is made from fine Italian 00 flour & fresh yeast and is hand kneaded, thrown and slowly proved by Italian Giovanni, a pizza chef with over 20 years’ experience from the Luciano region in Italy. Sauce is homemade from fresh local tomatoes & herbs and the traditional wood-fired oven was shipped from Naples, Italy. With 13 Pizza options as well as weekly specials there is something for everyone from Italian classics such as Pizza Alla Diavola with Nduja Salami, Spicy Soft Calabrian Sausage & Sweet Salami to Chef Jamie's Pizza; Boilie Goats Cheese, Fresh Rosemary & Wild Rocket. Beef Burgers are sourced from Tom Kearney, one of Waterford's finest butchers from his farm in Kilmacthomas. 6oz patties are made fresh each day to our secret recipe are chargrilled, tasty & messy as they should be and are served with skinny fries. Burzza also offers light bites such as its Antipasto platter, Toonbridge Bruschetta, Pecorino Bruschetta, Toonbridge Buffalo Mozzarella Ball, chicken wings, Caesar salad and more… Add to this a selection of gorgeous & sinful desserts such as Homemade Teacakes, Waffles, Tiramisu & Affogato and artisan ice cream milkshakes. With a casual & cosy atmosphere and friendly staff, Burzza is the type of restaurant that is is equally good for a family meal with the kids or for a relaxed bite with friends. As in Bodega restaurant, sourcing of produce is very important for Burzza, where the philosophy is all about buying the best produce possible for each dish, while endeavouring to keep it local. Diners can expect lots of fresh, seasonal and local toppings and fillings along with products imported from the Luciano area in Italy. Ingredients include Toonbridge Mozzarella and Ricotta Cheese; Gubbeen salamis; Boilíe goats cheese; Crowe farm bacon; Knockanore cheese; Spicy Calabrian ‘nduja salami, Ballybeg greens and olives from The Real Olive Co. Drinks includes a nice selection of wines matched to the food on offer as well as local craft beers & ciders, Prosecco and a great selection of Prosecco cocktails. Burzza is open 5 days per week serving lunch and dinner.
