The Bayview Restaurant’s head chef & owner, Byron Godoy, reigns from Guatemala. Fusing his Latin roots with traditional Irish cuisine, the results are vibrant flavours & colourful plates which are pleasing to the eyes and the taste buds.
Starting their 3rd season, owner couple Byron & Mary Carroll Godoy are hoping for their best year yet. Having recently renovated the interior of the Bayview, there is a fresh aura adding to the experience of dining in the restaurant.
From burgers to lobster, there is intention for each ingredient that is plated. Chef Byron’s prior culinary experience in Guatemala has afforded him the ability to appreciate the abundance of fresh ingredients that literally grow out of his back yard, giving his palate an education unique in this part of the world.
Collaborating with local food suppliers & fishermen, the Bayview Restaurant is proud of its farm to plate sourcing. New to the 2017 menu is locally harvested seaweed from Blath naMara adding to its current portfolio of Aran Island’s Goat Cheese, organic produce grown by The Aran Artisan and of course, fruits of the sea from Inis Mor’s local fishermen!
