The chefs keep the art of real cooking alive, preparing dishes from scratch, with the best ingredients, to bring real taste and value to the menu. The Cellar Restaurant incorporates a philosophy of promoting local food producers, where whole lambs are bought from local farmers.
The Cellar Restaurant is set in the old kitchens of The Step House Hotel. The Step House Hotel is a 200 year old dower house of the McMurrough Kavanagh Estate former Kings of Leinster. The Cellar Restaurant provides an intimate and atmospheric setting amongst the the beautiful Georgian townhouse with its deep archways and vaulted ceilings.
Head Chef Alan Foley, a Carlow native, began plying his trade at Ashford Castle. He continued to broaden his skills in the previously Michelin Star rated Sheen Falls Lodge where he became a sous chef. He later moved on to Peacock Alley under Conrad Gallagher and then on to Chapter One with Ross Lewis.
The Cellar Restaurant have been included in the Finals for Best Dining Restaurant in Ireland 2011, (Hotel and Catering Review). Head Chef, Alan Foley has been awarded Best Chef Carlow 2011 (Restaurant Association of Ireland. The Cellar Restaurrant has been awarded Best Hotel Restaurant Carlow 2011 by the Restaurant Association of Ireland.
