Baked potato with home made chili
 
This is a great snack that you can rustle up in a matter of minutes in the evening. You can prepare the chili in advance and store in the freezer or fridge and remove as needed. The baked potato is cooked in the microwave in a matter of minutes.
 
 
 
Ingredients:
- 4 Sirloin Steaks (175g Each)
- Fresh Ground White Pepper
- 450g mince beef
- 4 Large baking potatoes
- 1 Onion
- 1 tsp chili powder (add more if you think you can handle it)
- 3 Cloves garlic
- 200 g red kidney beans
- 400g chopped tomatoes (tinned is fine)
- 2 tsp tomato puree
- Olive oil
- Salt and pepper
Instructions:
1.Add the chili powder and cook for a minute while stirring constantly with a wooden spoon.
2.Add the beef and brown the meat off for a further 5 minutes using the wooden spoon to break it up as you go.
3.Add the tomato puree, chopped tomatoes and kidney beans and turn the heat down to a low temperature and gently simmer stirring every few minutes and cooking for 30 minutes.
4. Place the baked potato in the microwave and cook for about 7 or 8 minutes (this will vary on the size of the baked potato you are using. To check if cooked simply poke with a fork to see if soft)turning over once during the cooking process;
5.Season with salt and pepper at the end.
6.Serve with rice, sour cream and grated cheese.
