Butternut Squash Soup

Butternut Squash Soup

This lovely healthy soup made with Butternut squash is so easy to make yet so tasty and good for you.














Preparation Time: 10 minutes

Cooking Time: 35 minutes

Ingredients:

  • 3 Medium sized butternut squash
  • 2 Large white onions
  • 3 Large potatoes
  • 3 Large Carrots
  • 2 Cloves of Garlic
  • 1 Sprig of thyme
  • 1 Sprig of rosemary
  • 3 Litres of Vegetable stock (fresh or instant)
  • Pistachio nuts to garnish
  • Cream to garnish
  • Olive Oil
  • Salt and Pepper

Instructions:

1. Peel and remove the seeds from the butternut squash and dice into small cubes.

2. Peel the onions, potatoes and carrots and dice into similar size pieces.

3. Peel the garlic and remove the leaves from the thyme and rosemary and dice the 3 into a fine mixture.

4. Heat up the oil in a large pan to a medium heat and gently cook the prepared ingredients until soft without taking any color for 5 minutes.

5. Add the stock and cook over a low heat for 30 minutes

6. Remove from the heat and place in a blender with salt and pepper.

7. Serve the soup immediately garnished with a swirl of cream and some pistachio nuts.
